Farm to Table, Meet Dock to Dish

Common sense is making a return to the U.S. with the Farm to Table and now the Dock to Dish movement. The Dock to Dish movement couples, small, community-supported fisheries with local restaurants. Chef Michael Cimarusti in Los Angeles is helping pilot the California program, with his first order of fresh-caught California fish arriving the first week of September, just in time for the Labor Day holiday.

Patrons at Providence, where Cimarusti is head chef, can eat with confidence that their seafood is local and very much, fresh! Along with the latest expansion to the West Coast, Dock to Dish is also available in Montauk, New York, along with Key West, Florida. They are coming to Boston, MA, and the first international location in Vancouver, Canada!

The only problem left for chef’s and local eateries is that they don’t have control over the type of species, they just know they are getting a variety of safe, fresh, local seafood straight from the docks to their kitchen.
